A Lazy Girls Guide to… Frittata

This is my go to recipe when I get home late and I don’t want to eat anything to heavy. Its a zucchini frittata and its so easy and delicious!

You ll need one zucchini, cherry tomatoes, goats cheese or feta, 6-7 eggs, one onion, cup of frozen peas and chilli flakes. Oh, and the usual… salt and pepper. 🙂

First, chop the onions and fry them with the chilli flakes. Add the diced zucchini and  the cherry tomatoes (which I slice in half). Don’t forget to add the peas also.

Fry all for about 10 minutes, whilst you are pre heating the oven to 220 degrees.

Take the pan off the stove and mix the eggs in a separate bowl. When they are nicely mixed, cover the veg with the egg and add the salt and pepper.

Place the pan into the oven and wait for another 10 minutes.

Et voila! There is your lazy girls dinner!

VERY IMPORTANT! When taking the pan out of the oven – use a cooking glove – its super hot and I have burned myself by accident on several occasions!
